Thanksgiving Sweet Potatoes

We used to go to my Aunt and Uncle's house for Thanksgiving just about every year when I was growing up. My Aunt Myrna is a great cook - she makes all sorts of great stuff - especially my favorite Armenian goodies. I was never a fan of sweet potatoes, but every year at Thanksgiving, I'd gobble up these sweet potato cups, cleverly presented in orange halves. A few years ago I called Aunt Myrna and got the recipe from her.

2 Tablespoons
1 28 oz Can
A Pinch
1/4 Teaspoon
1 Teaspoon
1/4 Cup
Sweet Potatoes
Navel Oranges
White Wine Vinegar
Crushed Pineapple
Nutmeg
Cinnamon
Salt
Butter

1. Bring a pot of water to a boil and add the Sweet Potatoes. Boil until tender. Peel and mash the potatoes.

2. While potatoes are boiling, halve and empty the oranges. Bring a pot of water to a boil and add the vinegar. Add the orange peels and blanche for 5 minutes.

3. Mix in the can of crushed pineapple along with the nutmeg, cinnamon, salt, and butter.

4. Fill orange peels with Sweet Potatoes and Bake at 325 degrees for 20 minutes.
